~Menu Wednesday!~
I'm now on week 6 of my workout/weight loss challenge! My cute hubs has joined me in eating better this week. It is always easier when your family is eating the same thing. Again, nothing too exciting on my menu this week. If you are trying to lose weight, here are some ideas (except for the Easter meal):
Ham, scalloped potatoes, green bean casserole & rolls (Easter meal)
Spinach salad topped w/ tuna & kidney beans
Chicken & broccoli
Tuna melt
Spinach salad topped w/ chicken, pinto beans & salsa
Chicken & rice
Several of you have emailed asking what my goal is during this challenge. My goal is to work out EVERYDAY for 10 weeks and to lose 10 pounds. I would like to lose 4 more pounds in the next 4 weeks. Just by eating better and watching my calories combined with working out, I have lost 5 pounds in the past 2 weeks. Normally, it would take me about 6-8 weeks to lose that much. For the year, I'm up to 11 pounds lost! Yeah! Now I just need to remember how hard it has been to lose it so I don't let myself gain it back. I love setting goals and working toward something. I feel so accomplished when I finish! I'll keep you all posted.

~Tuesday Tip...Check Your Receipt!~
There is a reason why I'm always saying "check your receipt"! I've had 3 problems at 3 different stores in the past couple weeks. If I hadn't noticed the problem, I would have wasted over $15! Two of the issues I caught while checking out and one of them once I got to my car. Remember, to always be kind to the cashier while pointing out a problem. It is normally the computer's fault and not the cashier anyway. If you are nice to them, they are usually nice to you :)
Mistakes happen, just make sure that you don't have to pay for them!

~Hormone Free Chicken Sale!~
Good Monday Sassy Savers!
Hope everyone had a wonderful Easter weekend and took time to celebrate the resurrection. We had a wonderful 3 day weekend!
While I was in Kroger picking up some rolls for Easter lunch, I ran across a good deal on hormone free chicken. Kroger has Pilgrim's Pride hormone free (the only kind of chicken I will buy is hormone free) for only $1.39 per lb. I bought 3 family packs and will go back for 8-10 more before the sale ends. I normally purchase Tyson hormone free for .99-$1.29 per lb on sale, however I'm completely out and have not seen it on sale in a long time. Plus, I would have to drive to another store. After gas, it is cheaper to just get it at Kroger. The fact that I get fuel credit is another bonus :) Do you all use the Kroger fuel credits to get discounted gas? I'll be posting about that this week!

~Menu Wednesday!~
My menu is NOT exciting at all! I'm half way through (week 5) my weight loss/workout challenge. Boy, has this been hard! I'm finally starting to see results on the scale! Yeah! It was no fun to workout EVERYDAY and not see the scale go down...No fun at all! You can imagine my excitement when good things started happening on the scale last week.
This is what I have so far:
Baked chicken & broccoli
Turkey & spinach wrap
Fish & green beans
Baked chicken, spinach & kidney beans
Chicken & spinach wrap with pinto beans
My family will be eating a few other meals while I'm being good.
This is my alternate plan for them:
Beef stroganoff w/ fresh green beans
Pizza w/ spinach salad
Taco night
Basically, I'm trying to up my protein and keep my calories down. I'm not eating nearly as much fruit and that seems to be helping also. I have a renewed spirit about the challenge now. Plus, I feel so good working out each day. Working out is such a great stress reliever. My back is feeling better too!
Of course, my cute hubs has lost weight just by watching me workout. How is that possible?! We are both super excited about our anniversary trip and that makes the diet and exercise much easier to do knowing that we have a goal in sight.

~JBF Update~
JBF update!
Sorry I forgot to tell you how I did at the JBF sale this year. I took around 300 items and 225 of them sold. I'm very happy with that! Tons better than I would have done at a garage sale.
We have a great deal of expenses coming up this summer and I am in money saving mode. So, my goal was to only sell and not shop this time around. Success!

~My Sprout's Trip~
Good Monday Sassy Savers! Hope everyone had a great weekend and enjoyed the sunshine. We had a fun weekend and tried to spend as much time outside as possible.
Saturday, I ran to Sprout's and got the following:
Watermelon $2.99
Cantaloupe $1.50
Green Beans .38
Red Potatoes .22
Corn .25 each
Spinach $1.02
Apples .88 per lb
Cucumber .68
Veggie Chips $2.50 each
These prices are good at Sprout's until Wednesday. It was a small trip for me this time. I only go to Sprout's if I'm in the area. I do love the place, but it is too far away to make a special trip there. Especially, when gas is going up!

I'm taking the pantry/freezer challenge this week. Anyone else want to take it with me??? I'll be using only what I have in my pantry, fridge & freezer this week based off of what I already have on stock.
Over the weekend, I did pick up some milk, buns and fresh fruit. I'm hoping that between it and some other fruit I already have that I'll be able to make it until the weekend.
This is what's cookin' at my house:
Oven baked Chicken w/ broccoli
Chicken tacos w/ beans (using leftover chicken)
Tuna w/ refried beans & avocado wrap
Hamburgers

~Buttercream Frosting!~
My cake decorating skills need some practice. I think this project was a bit ambitious with a 2 tiered cake for my first time.
There is another recipe that uses Crisco, but I just couldn't do that. I'm really working hard on exercising and watching my diet before our 10 year anniversary trip. The idea of using Crisco sort of grossed me out, so I went with this recipe instead.
Buttercream Frosting Recipe
1 cup butter (2 sticks), softened (but not melted!) Ideal texture should be like ice cream. I put 2 sticks in the microwave for 15 seconds and it was perfect!
3-4 cups confectioners (powdered) sugar
*I ended up needing 4
1 tablespoon vanilla extract
2-4 tablespoons milk
*I used Vit. D milk
Instructions:
Beat butter for a few minutes on medium speed.
Add 3 cups powdered sugar and turn the mixer on the lowest speed until the sugar has been incorporated with the butter.
Increase mixer speed to medium and add vanilla extract and 2 tablespoons of milk and beat for 3 minutes.
If your frosting needs a more stiff consistency, add remaining sugar (I did).
If your frosting needs to be thinned out, add remaining milk 1 tablespoon at a time.
That's it...Enjoy!

~April Flowers!~
Good Monday Morning!
Did that crazy storm keep you all up last night? I started hearing it about 1-ish and then got out of bed by 1:45 am. It was so loud and strong! I was worried for our little garden and the flowers that we planted this weekend. Hunky hubs checked everything out this morning and nothing floated away!
Hope you all had a great weekend. I hosted a luncheon for 2 of my friends who were having birthdays. I made frosting from scratch for the first time! I was nervous about it as I wasn't sure if it tasted right. Turns out it was great! Like everyone said, once you make it from scratch you won't go back to the can!
I'll be posting the recipe soon just in case any of you want to give it a try.

~Kroger's New Coupon Policy~
This is a BIG deal if you are a couponer! PLEASE read all the way to the bottom and take action! Let them know that you are NOT HAPPY and this is a game changer for you and you family. Act fast!
Here's the deal. I emailed Kroger Corporate offices last week requesting the new coupon information regarding our local Kroger store. They confirmed they got the email, but never responded. Today, I called them and was told that they are "way behind on their emails". Hmmm. Then I asked if she could email me the current coupon policy and I was told "We can't do that anymore...It is up to interpretation by the individual store manager." Okie dokie! I've never heard of a corporation not being able to give out their policy before. Moving on...
Next step was to call my local Kroger and see if the store manager was planning to change the policy. The associate I spoke to said that "The policy will change and they are just waiting on word from Kroger Corporate as to when!" I then told her that the corporate office told me it was only the Houston area stores and that the rest of the stores got to choose if they wanted to change per the store manager. She told me that was not the case! They are just waiting on word as to when they will stop double/triple coupons.
She said as of today, the Dallas area Kroger stores will continue with the double/triple policy. However, you are no longer able to stack a paper coupon with a digital (ecoupon). If you have loaded an electronic coupon to your Kroger Plus card, then the digital coupon will apply before the manufacturer paper coupon. A digital coupon cannot be removed from a transaction once redeemed.
Go HERE to leave a comment on the Kroger website. I encourage you to explain that you only started shopping at Kroger because of the double/triple policy. Explain how disappointed you are and that they will lose your business by doing so. If enough of us write in, it may just make a difference. Remember if you don't write in, don't complain about it. If everyone complains, but doesn't make their voice heard...it is pointless complaining. Sorry this is so long, I just wanted to give you all the details.
